Ingredients

1 cup rolled oats, gluten-free⁠ if needed⁠
1 cup cottage cheese⁠
2 large eggs⁠
2 tbsp maple syrup⁠
1 scoop Youtheory® Collagen Powder⁠
2 tsp baking powder⁠
2 tsp vanilla⁠
1/2 tsp cinnamon⁠

Directions

In a high-speed blender, blend cottage cheese, oats, eggs, maple syrup, Youtheory® Collagen Powder⁠, baking powder, vanilla, and cinnamon until well mixed.⁠
Spray a non-stick pan with oil and spoon the 1/4 cup of batter onto the pan.⁠
Cook each pancake for 2-3 minutes on each side, then flip. There won’t be as many bubbles as your average pancake, so use your best judgment and check with your spatula.⁠
Repeat until the batter is used up and serve with maple syrup and butter!⁠
