Ingredients

  • 1 cup rolled oats, gluten-free⁠ if needed⁠
  • 1 cup cottage cheese⁠
  • 2 large eggs⁠
  • 2 tbsp maple syrup⁠
  • 1 scoop Youtheory® Vanilla Collagen Powder⁠
  • 2 tsp baking powder⁠
  • 1 tsp vanilla⁠
  • 1/2 tsp cinnamon⁠

Directions

  1. In a high-speed blender, blend cottage cheese, oats, eggs, maple syrup, Youtheory® Vanilla Collagen Powder⁠, baking powder, vanilla, and cinnamon until well mixed.⁠
  2. Spray a non-stick pan with oil and spoon the 1/4 cup of batter onto the pan.⁠
  3. Cook each pancake for 2-3 minutes on each side, then flip. There won’t be as many bubbles as your average pancake, so use your best judgment and check with your spatula.⁠
  4. Repeat until the batter is used up and serve with maple syrup and butter!⁠
